Chocolate Peanut Almond Protein Bites

I was looking for an easy recipe for Protein Bites that had no added sugar.  I looked at some recipes and modified into the one below.  This is great for post workout recovery or pre-workout energy.  Just don't go chowing down on these because of the high fat content.  I would say a serving size would be about 2-3.

INGREDIENTS:

2 T of Unsweetend Cocoa Powder
1/4C of Splenda
2 T of Flax seeds
Large Handful of Raw Almonds
1/4C Water
1/4C Natural Peanut Butter or any nut butter of your choosing (no added oils or sugar)
2 Scoops of your favorite flavor Protein Powder

DIRECTIONS:

1. Using a coffee grinder grind almonds into a powder
2. Combine splenda and water and set aside
3. Combine all remaining ingredients and splenda water in a large bowl
4. Mix until you have a nice dough
5. Using a teaspoon or a tablespoon to make bite sized balls
6. Freeze for an hour or two then store in a airtight container in the fridge

Roasted Eggplant Parm Rounds

1 large Eggplant or 2-3 Small Eggplants
Fresh Thyme
Cooking Spray
8oz Pkg Low Fat Shredded Mozzarella Cheese
1C of tomato sauce - any on hand

Instructions:
  1. Peel entire eggplant and slice into 3/4 inch rounds
  2. Preheat oven to 400 degrees
  3. Line a cookie pan with aluminum foil and spray with cooking spray
  4. Line rounds on the cookie pan
  5. Lightly spray the eggplants with cooking spray or drizzle lightly with olive oil (the eggplant will absorb the oil if you coat it too much)
  6. Sprinkle lots of fresh thyme over all the rounds
  7. Roast in oven for 20 minutes or until the eggplant is soft and lightly browned on the edges
  8. Take out the eggplant and drop spoonfuls of tomato sauce on the rounds and they top with mozzarella cheese
  9. Return to oven till cheese is melted and ready to serve

Super easy and they are always a hit at any event...bring a cooler! They also turn out to be much more waist friendly than other acoholic drinks. Don't let the kiddies into them!

What you need:


1 Pkg of Jello SF FF Cheesecake Instant pudding mix
2 C of cold Skim Milk
3/4 C of VanGogh Peanut Butter and Jelly Vodka
1 Thawed tub of Lite Cool Whip
Restaurant Condiment Sized To Go Cups and Lids


What you do:

  1. In a large mixing bowl, mix the jello and milk. Whisk for two minutes.
  2. Add in vodka and mix well - two more minutes will do it
  3. Fold in the cool whip with a wooden spoon or plastic scraping spatula. Incorporate well.
  4. Pour into a large plastic bag and cut off one corner to fill cups or use a liquid measuring cup.
  5. Freeze for at least two hours and enjoy. Keep frozen for more of a ice cream texture!!

Rootbeer Float Pudding Shots

I have lots of these recipes...YUMMO!

Super easy and they are always a hit at any event...bring a cooler! They also turn out to be much more waist friendly than other acoholic drinks. Don't let the kiddies into them!

This is just one of the many I plan on putting up here as I try them.














What you need:


1 Pkg of Jello French Vanilla Instant pudding mix
2 C of cold Skim Milk
3/4 C of Pinnacle Rootbeer Vodka
1 Thawed tub of Lite Cool Whip
Restaurant Condiment Sized To Go Cups and Lids


What you do:

  1. In a large mixing bowl, mix the jello and milk. Whisk for two minutes.
  2. Add in vodka and mix well - two more minutes will do it
  3. Fold in the cool whip with a wooden spoon or plastic scraping spatula. Incorporate well.
  4. Pour into a large plastic bag and cut off one corner to fill cups or use a liquid measuring cup.
  5. Freeze for at least two hours and enjoy. Keep frozen for more of a ice cream texture!!

  1. In a large mixing bowl, mix the jello and milk. Whisk for two minutes.
  2. Add in vodka and Hershey Syrup and mix well - two more minutes will do it
  3. Fold in the cool whip with a wooden spoon or plastic scraping spatula. Incorporate well.
  4. Pour into a large plastic bag and cut off one corner to fill cups or use a liquid measuring cup.
  5. Freeze for at least two hours and enjoy. Keep frozen for more of a ice cream texture!!

White Chocolate Cookie Dough Pudding Shots

Crock Pot Southwest Pot Roast

1     3-4lb Pot/Chuck Roast
1     Box for Making a Taco Dinner
       -This includes:
         ~Taco shells
         ~Taco Seasoning Pkt
         ~Taco Sauce

Rub the entire pot roast with the packet of taco seasonings.  Make sure to coat the roast well.  Squeeze the taco sauce over the roast.  Cook on low for 8-10 hours.  Pull the meat apart and serve in the taco shells with all of your favorite fixings.
